Doughnuts – Pan-1
Description
These homemade yeast doughnuts are the ultimate comfort treat, offering a tender, pillowy interior and a crisp, golden exterior. Made with a blend of bread flour for structure and all-purpose flour for tenderness, enriched with butter and dry milk powder for a deeper flavor and better browning. The dough is fried to perfection, creating a light texture that holds up beautifully to various toppings. Whether you prefer them simple and dusted with powdered sugar, rolled in cinnamon sugar, or glazed with chocolate, these doughnuts are a versatile centerpiece for weekend brunches, holiday breakfasts, or a sweet afternoon pick-me-up. They taste best when served warm, straight from the fryer.Ingredients
Directions
-
Combine the bread flour, all-purpose flour, sugar, dry milk powder, and salt in the bowl of a bread machine or a large mixing bowl.
-
Add the softened butter and water to the dry ingredients.
-
If using a bread machine, place the dry yeast in the yeast holder or on top of the flour, ensuring it does not touch the liquid yet.
-
Select the "Basic Dough" or "Dough Only" setting and press start. Allow the machine to knead and rise the dough for approximately 2 hours and 25 minutes, or until doubled in size.
-
Turn the dough out onto a lightly floured surface. Gently divide the dough into 12 equal portions.
-
Roll each portion into a smooth ball. Place the balls on a lightly floured surface, cover with plastic wrap, and let them rest for 20 minutes to relax the gluten.
-
Shape each rested ball into your desired doughnut form: a ring, a twist, or an oval. For rings, poke a hole through the center with your finger.
-
Place the shaped doughnuts on a greased baking sheet or parchment-lined tray. Cover loosely and proof at a warm temperature (around 90&# 194;°F/32ðC) for 30 minutes, or until nearly doubled in volume.
-
While the dough proofs, heat oil in a deep pot or fryer to 360ðF (182ðC).
-
Carefully lower the proofed doughnuts into the hot oil, frying in batches to avoid overcrowding.
-
Fry until golden brown on both sides, turning once halfway through, which should take about 1 to 2 minutes per side.
-
Remove the fried doughnuts with a slotted spoon and drain on paper towels.
-
Let the doughnuts cool slightly. While warm, roll in cinnamon sugar, dip in melted chocolate, or dust with powdered sugar.
-
Optionally, fill with jelly or custard using a piping bag before serving. Enjoy immediately.
