  1. Cut thin slices of roasting beef to approximately 4 x 6 inches.
  2. Ensure slices are cut with the grain so they hold together during rolling.
  3. Pound the meat slices lightly to flatten and tenderize them.
  4. Brush each slice lightly with prepared mustard.
  5. Sprinkle the slices with salt and freshly ground black pepper to taste.
  6. In a small bowl, mix together diced bacon and diced onions.
  7. Spread the bacon and onion mixture evenly over the meat slices.
  8. Starting at the narrow end, roll up the meat slices tightly.
  9. Secure each roll with skewers, toothpicks, or kitchen string.
  10. Heat oil in a heavy pot over medium-high heat.
  11. Brown the rolls well on all sides in the hot oil.
  12. Carefully add 1 cup of boiling water to the pot to deglaze and create steam.
  13. Cover the pot and braise gently for 2 to 2.5 hours until meat is tender.
