Directions
-
Preheat the oven to 325F (163C).
-
Rinse the turkey thoroughly inside and out, then pat completely dry with paper towels.
-
Peel and core the apples, then cut them into 1-inch wedges.
-
In a large bowl, combine the mixed dried fruit, golden raisins, and apple wedges.
-
In a blender or food processor, combine the orange juice and chipotle peppers (along with their sauce). Process until smooth, about 1 minute.
-
Add 1 cup of tequila and 1 cup of Grand Marnier to the blender and pulse to combine.
-
Pour this liquid mixture over the fruit and apple bowl. Let it sit for 15 minutes to plump the fruit.
-
Drain the fruit, reserving the liquid in a separate container.
-
Cut one stick of butter into 1/2-inch pieces and stir them into the drained fruit mixture.
-
Stuff the turkey cavity generously with the fruit mixture.
-
Place the turkey into a roasting bag. Arrange any remaining fruit on top of the bird inside the bag.
-
Pour the reserved orange-chipotle-liquor mixture over the turkey and fruit in the bag.
-
In a small bowl, combine the remaining 2 cups of tequila and 2 cups of Grand Marnier.
-
Using a basting syringe fitted with a metal injection nozzle, inject the tequila mixture evenly throughout the turkey breast and thighs.
-
Melt the second stick of butter and carefully pour it over the turkey inside the bag.
-
Seal the roasting bag according to package instructions and cut a 1/4-inch slit at the top to allow steam to escape.
-
Place the bag in a roasting pan and roast in the preheated oven for 2 1/2 hours.
-
Every 30 minutes, carefully open the bag (shielding your face from hot steam) and inject more of the tequila mixture until it is all used up.
-
When done, carefully slit open the bag and transfer the turkey to a serving platter.
-
Scoop out the fruit stuffing and place it in a serving bowl.
-
Strain the juices accumulated in the bag, skim off any excess fat, and serve in a gravy boat.
