  1. Preheat your oven to 350°F (175°C).
  2. Rinse the dressed duck inside and out, then pat it completely dry with paper towels.
  3. Rub the duck generously with salt, both inside and out.
  4. Place the duck breast-side down in a roasting pan.
  5. Roast for 30 minutes to render some of the fat.
  6. Turn the duck over so it is breast-side up and continue roasting for another 45 minutes to 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. While the duck roasts, place the celery stalks in the cavity or around the duck for added flavor.
  8. Remove the duck from the oven and let it rest for 15 minutes.
  9. Pour the accumulated fat from the roasting pan into a measuring cup, reserving about 2 tablespoons of fat if desired, and discard the rest.
  10. In a small saucepan, combine the reserved fat (or butter), orange juice, and apple jelly over medium heat.
  11. Stir continuously until the jelly is melted and the sauce thickens slightly, about 3-5 minutes.
  12. Carve the duck and serve hot with the warm orange gravy spooned over the top.
