Directions

  1. Preheat oven to 325°F (165°C).
  2. Peel carrots and cut into 2-inch chunks.
  3. Peel potatoes and quarter them.
  4. Slice onions.
  5. Pat the pot roast dry and rub generously with salt.
  6. Heat shortening in a Dutch oven over medium heat.
  7. Sear the pot roast on all sides until browned, turning once.
  8. Reduce heat to low.
  9. Pour apple cider and barbecue sauce over the meat.
  10. Cover the Dutch oven and place in the oven.
  11. Roast for 2 hours.
  12. Remove from oven, add carrots, potatoes, onions, and okra.
