Description

This sophisticated Duxelles-style stuffing combines the earthy depth of finely chopped mushrooms with the luxurious, creamy texture of poached calf brains. The mixture is enriched with butter and fresh parsley, creating a smooth, velvety paste that is perfect for stuffing poultry, mushrooms, or serving as a spread. The subtle acidity from the white vinegar cuts through the richness, balancing the flavor profile beautifully. Ideal for elegant dinner parties or special occasions, this dish showcases classic French technique with a unique twist. The result is a decadent, aromatic filling that adds a layer of complexity to any meal, appealing to adventurous palates who appreciate traditional, high-quality ingredients prepared with care and precision.

Ingredients

Directions

  1. Soak the calf brains in a bowl of cold water with 2 tablespoons of white vinegar for 30 minutes to cleanse them.
  2. Drain the brains and carefully remove as much of the membrane and red veins as possible using your fingers or a small knife.
  3. In a small saucepan, combine 3 cups of cold water, the remaining 2 tablespoons of vinegar, a pinch of salt, and the bay leaf.
  4. Bring the liquid to a boil, then reduce heat and simmer for 10 minutes.
  5. Gently lower the prepared brains into the simmering liquid and immediately remove the pan from the heat.
  6. Cover the pan and let the brains sit in the hot liquid for 8 minutes to poach gently.
  7. Transfer the poached brains to a small bowl using a slotted spatula and set aside to cool slightly.
  8. Heat 2 tablespoons of unsalted butter in a large skillet over medium-high heat.
  9. Add the thinly sliced mushrooms, sprinkle with salt and black pepper, and sauté until they release their moisture and are nearly dry, about 8 minutes.
  10. Add the chopped shallots to the skillet and cook for 2 minutes longer until softened.
  11. Add the cooked brains to the skillet, stirring and breaking them up with a spatula until the mixture is almost pureed and smooth.
  12. Stir in 1/4 cup of reserved veal stock (or water/broth if stock is unavailable) and simmer briefly until the mixture thickens.
  13. Remove from heat, stir in the chopped parsley, and adjust seasoning with salt and pepper to taste.
  14. Allow the mixture to cool completely, then cover and chill before using as a stuffing.
