Description

This hearty chili combines tender cubes of sirloin and London broil with a robust blend of spices, tomato sauce, and beer for a deep, savory flavor profile. The meat simmers slowly until fork-tender, absorbing the earthy notes of cumin, chili powder, and garlic. It is a perfect comfort food for cold evenings or game day gatherings. While simple in technique, the long simmer time develops complex layers of taste that make it a standout dish. Serve it hot with crusty bread or over rice for a satisfying meal that feeds the family well.

Ingredients

Directions

  1. Heat Wesson oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.
  2. Add the cubed sirloin and London broil to the pot and brown the meat on all sides.
  3. If using sausage, brown it separately until cooked through, then drain excess fat.
  4. Return the beef and sausage to the pot and add half of the beef broth.
  5. Stir in the tomato sauce, Snap-E-Tom, and 6 ounces of Budweiser beer.
  6. Add 6 tablespoons of chili powder, garlic powder, onion powder, and 1 teaspoon of Tabasco sauce.
  7. Bring the mixture to a boil, then reduce heat to low and cover.
  8. Simmer gently for 1 hour and 30 minutes, or until the meat is fork-tender.
  9. Stir in the remaining 5 tablespoons of chili powder, 1 teaspoon of Tabasco sauce, and cumin.
  10. Continue to simmer uncovered for another 30 minutes to thicken the sauce.
  11. Taste and add salt to taste before serving hot.
