Directions
-
Prepare the vegetables: Shred carrots, dice peeled green tomatoes, and chop zucchini. Measure out 1 1/2 quarts of chopped onions.
-
In a large preserving kettle or heavy-bottomed stockpot, combine the chopped onions, shredded carrots, diced green tomatoes, chopped zucchini, light corn syrup, white vinegar, salt, ground coriander, ground ginger, crushed red pepper, and ground cumin.
-
Place the pot over medium-high heat and bring the mixture to a rolling boil, stirring occasionally to prevent sticking.
-
Once boiling, reduce the heat to maintain a gentle simmer and cook for 5 minutes, stirring occasionally to ensure the vegetables soften slightly and the flavors meld.
-
While the relish simmers, prepare your canning jars by washing them in hot soapy water and keeping them hot until ready to fill.
-
Using a ladle, spoon the hot relish evenly into the prepared hot jars, leaving 1/4 inch of headspace at the top.
-
Spoon the hot liquid from the kettle into the jars to fill them within 1/4 inch of the tops, ensuring the vegetables are fully submerged.
-
Run a slim, non-metal utensil (such as a plastic chopstick or bubble remover) down the insides of the jars to release any trapped air bubbles.
-
Add more relish if necessary to maintain the 1/4 inch headspace.
-
Wipe the tops and threads of the jars with a damp, clean cloth to remove any residue that could prevent a proper seal.
-
Place the lids on the jars and screw on the bands until fingertip-tight, following the manufacturer's directions.
-
Process the jars in a boiling water bath canner for 15 minutes, ensuring the water covers the jars by at least 1 inch.
-
Remove the jars from the canner and place them on a towel-lined counter to cool undisturbed for 12 to 24 hours. Check for seals before storing.
