Ingredients

Directions

  1. Trim separable fat from the beef round steak and remove any bones.
  2. Place the steak between plastic wrap and pound it with a meat mallet until it is 1/2-inch thick.
  3. Cut the pounded steak into strips that are 1 inch wide and 4 inches long.
  4. Trim any excess fat from the lean beef bacon slices.
  5. Place a slice of bacon on each beef strip and roll up tightly.
  6. Secure each roll-up with a small wooden pick to keep it closed.
  7. Heat cooking oil in a large frying pan over medium-high heat.
  8. Brown the beef roll-ups slowly in the hot oil until cooked on all sides.
  9. Remove the browned roll-ups from the frying pan and transfer them to a pressure cooker pan.
  10. Add the onion soup mix and 2 cups of water to the hot frying pan.
  11. Simmer the soup mixture for 3 minutes, scraping up any browned bits from the bottom of the pan.
  12. Pour the hot onion liquid over the beef roll-ups in the pressure cooker.
  13. Seal the pressure cooker and cook at 10 lbs pressure for 10 minutes.
  14. Release pressure carefully and remove the roll-ups to a warm serving dish.
  15. In a small bowl, combine cornstarch and 1/2 cup of cold water, mixing until smooth.
  16. Pour the cornstarch mixture into the remaining liquid in the pressure cooker.
  17. Simmer the gravy, stirring constantly, for 3 to 4 minutes or until it thickens.
  18. Spoon the thickened gravy over the beef roll-ups.
  19. Garnish with fresh parsley and cherry tomatoes before serving.
