Description

These Easy Beef Roll-Ups are a comforting Southern classic that delivers maximum flavor with minimal effort. Tender strips of round steak are wrapped in lean beef bacon and browned to perfection before being slow-cooked in a pressure cooker. The result is melt-in-your-mouth meat infused with smoky bacon notes. A quick, thickened onion soup gravy adds a savory depth that pairs beautifully with mashed potatoes or rice. Perfect for busy weeknights or when you crave a hearty, home-style meal that feels indulgent yet simple to prepare from pantry staples.

Ingredients

Directions

  1. Trim separable fat from the beef round steak and remove any bone.
  2. Pound the steak with a meat mallet or heavy saucer until it is about 1/2-inch thick.
  3. Slice the pounded steak into strips that are 1 inch wide and 4 inches long.
  4. Trim any excess fat from the lean beef bacon slices.
  5. Wrap one slice of bacon around each steak strip, securing with small wooden picks or toothpicks.
  6. Heat cooking oil in a large frying pan over medium-high heat.
  7. Brown the beef roll-ups slowly on all sides until golden, then transfer them to a pressure cooker or heavy pot.
  8. Pour off excess fat from the frying pan, leaving the browned bits.
  9. Stir in the onion soup mix and 2 cups of water into the frying pan.
  10. Simmer the mixture for 3 minutes, scraping up the browned particles from the bottom of the pan.
  11. Pour the hot onion liquid over the roll-ups in the pressure cooker.
  12. Seal the pressure cooker and cook at 10 lbs pressure for 10 minutes.
  13. Release pressure carefully and remove the roll-ups to a warm serving dish.
  14. In a small bowl, combine cornstarch and 1/2 cup of cold water until smooth.
  15. Pour the cornstarch mixture into the remaining gravy in the cooker.
  16. Simmer the gravy, stirring constantly, for 3 to 4 minutes until thickened and bubbly.
  17. Spoon the thickened gravy over the beef roll-ups.
  18. Garnish with fresh parsley and cherry tomatoes before serving.
