Ingredients

Directions

  1. Preheat your oven to 350ðF (175ðC).
  2. Place 1 cup of sugar in a food processor and pulse for 30 seconds until finely ground.
  3. Add the softened butter to the ground sugar in the food processor and blend until the mixture is very fluffy and pale.
  4. In a separate bowl, whisk together the all-purpose flour and rice flour.
  5. Gradually beat the flour mixture into the butter mixture in the food processor, adding it in small portions, until a dough forms.
  6. Turn the dough out onto a lightly floured surface and knead gently until smooth, adding up to 1/2 cup more all-purpose flour if the dough is too sticky.
  7. Press the dough firmly and evenly into the bottom of a 15x9 inch jelly roll pan.
  8. Use a sharp knife to score the dough into desired bar shapes before baking.
  9. Prick the surface of the dough all over with a fork to prevent excessive puffing.
  10. Sprinkle the remaining 2 tablespoons of sugar evenly over the top.
  11. Bake at 350ðF (177ðC) for 10 minutes, then reduce the oven temperature (149ðC)to 300ðF and continue baking for another 30 to 40 minutes, or until the edges are golden brown.
  12. Remove from the oven and cut along the scored lines while still warm.
  13. Allow the shortbread bars to cool completely in the pan before transferring them to an airtight container for storage.
