Egg Bread
Description
This classic French cheese dish transforms simple ingredients into a luxurious, communal dining experience. Starting with a base of Gruyere, Emmental, Raclette, and Vacherin de Fribourg, the cheeses melt into a rich, velvety sauce infused with garlic and white wine. The addition of kirsch adds a subtle aromatic kick that cuts through the richness. Traditionally served with cubes of stale bread for dipping, this recipe takes a final turn by incorporating a raw egg stirred vigorously at the end to create a creamy, custard-like texture. The remaining bread is tossed in to soak up every last drop of cheesy goodness. It is the perfect cozy dinner for cold evenings or a satisfying vegetarian main course that feels indulgent yet straightforward to prepare.Ingredients
Directions
-
Cube the French bread into bite-sized pieces and leave them out for a few hours or overnight to dry slightly.
-
Rub the inside bottom and sides of a heavy-bottomed pot or fondue pot with the cut side of the garlic clove.
-
Pour white wine into the pot and place it over medium-high heat on the stove.
-
Bring the wine to a boil, then remove from heat.
-
Add the Gruyere, Emmental, Raclette, and Vacherin cheeses gradually, stirring constantly with a wooden spoon until melted.
-
Return the pot to low heat or place on a fondue burner to keep warm.
-
Season with freshly ground black pepper and stir in kirsch.
-
Serve immediately with the dried bread cubes and fondue forks for dipping while the cheese is hot.
-
When only about 3/4 cup of cheese sauce remains, crack the raw egg into the pot.
-
Stir the egg rapidly into the cheese until it forms a creamy, thickened mixture.
-
Add any remaining bread cubes to the pot and toss them thoroughly to coat with the cheesy egg mixture.
-
Turn off the heat and serve the final mixture as a hearty, comforting dish.
