Description

This classic Challah is a rich, slightly sweet egg bread that is a staple of Jewish cuisine and beloved worldwide. The dough is enriched with eggs and oil, resulting in a soft, tender crumb and a beautiful golden-brown crust. Traditionally braided, this loaf is perfect for Shabbat dinners, holidays, or simply as an elegant side for any meal. The addition of optional saffron can impart a subtle floral note and a warm yellow hue. Serve it warm with butter or use it for making French toast. It freezes beautifully, making it a great make-ahead recipe for busy weeks.

Ingredients

Directions

  1. In a small bowl, combine yeast, sugar, and 1/4 cup of the lukewarm water. Let stand for 5-10 minutes until foamy.
  2. If using saffron, dissolve it in the remaining lukewarm water.
  3. In a large bowl, sift together flour and salt. Make a well in the center.
  4. Into the well, add the foamy yeast mixture, eggs, oil, and remaining water (with saffron if using).
  5. Mix until a shaggy dough forms, then turn out onto a floured surface.
  6. Knead the dough for 8-10 minutes until smooth, elastic, and no longer sticky.
  7. Place dough in a lightly oiled bowl, turning to coat. Cover with a damp towel and let rise in a warm place for 1 hour, or until doubled in size.
  8. Punch down the dough to release air bubbles.
  9. Divide the dough into three equal portions.
  10. Roll each portion into a long strip of even thickness.
  11. Pinch the tops of the three strips together. Braid them loosely, tucking the ends under as you go.
  12. Place the braided loaf on a baking sheet lined with parchment paper.
  13. Cover and let rise again for 45-60 minutes, or until puffy.
  14. Preheat oven to 350&# 194;°F (175°C).
  15. Brush the loaf with beaten egg yolk and sprinkle with poppy seeds.
  16. Bake for 30-35 minutes, or until golden brown and the loaf sounds hollow when tapped on the bottom.
  17. Cool on a wire rack before slicing.
