  1. Sprinkle the cubed eggplant with salt and place in a colander. Let it sit for 20 to 30 minutes to draw out excess moisture, then rinse thoroughly and pat dry.
  2. In a medium pot, heat ghee over medium heat. Add the chopped Spanish onion and sauté until translucent and soft, about 5 minutes.
  3. Add cumin, coriander, turmeric, cinnamon, cardamom, and cayenne to the pot. Stir constantly for 2 minutes to toast the spices and release their aromas.
  4. Add the rinsed eggplant, apple juice, and water to the pot. Stir to combine, then cover and simmer over low heat for 10 to 15 minutes until the eggplant is tender.
  5. While the eggplant simmers, bring a small amount of water to a boil in a separate pot. Add the washed and stemmed spinach, cover, and cook until just wilted and bright green, about 1 to 2 minutes.
