Description

Indulge in the luxurious layers of this El Rey Chocolate Banana Tart. The base is a tender, sweet crust made with almond flour and cold butter, providing a nutty contrast to the filling. Sliced ripe bananas are nestled in the shell and caramelized with brown sugar and butter during baking. The crown jewel is a light, airy chocolate mousse made with high-quality El Rey dark chocolate, whipped egg whites, and yolks. This dessert offers a perfect balance of textures: crisp crust, soft fruit, and silky chocolate. It is an impressive yet manageable treat for dinner parties or special weekend brunches, showcasing bold chocolate flavors without being overly heavy.

Ingredients

Directions

  1. Cut 2 eggs into small pieces and set aside for the dough.
  2. Slice 4 ripe bananas and set aside for the filling.
  3. Cut 4 tablespoons of unsalted butter into small pieces for the banana layer.
  4. In a heavy-duty mixer bowl, combine 1 1/2 cups all-purpose flour, 1 cup confectioners sugar, and 1/2 cup almond flour.
  5. Add the 12 tablespoons of cold unsalted butter to the dry ingredients.
  6. Using the paddle attachment, beat the butter into the flour mixture until it reaches a grainy texture with no large lumps of butter visible.
  7. Add the cut eggs to the mixture and mix on low speed until a smooth dough forms.
  8. Chill the dough for at least 2 hours, or preferably overnight, to firm it up.
  9. Roll out the chilled dough and line a 10-inch tart pan with it.
  10. Arrange the sliced bananas evenly in the prepared tart shell.
  11. Place the small pieces of butter on top of the bananas.
  12. Sprinkle 1/2 cup of dark brown sugar over the bananas and butter.
  13. Preheat the oven to 350 degrees Fahrenheit (177&# 194;°C).
  14. Set up a double boiler with hot, not boiling water, in the bottom.
  15. In the top of the double boiler, melt 3 oz El Rey Chocolates (Bucare Bitter) with 3 tablespoons unsalted butter, stirring frequently until smooth.
  16. Remove the chocolate mixture from heat and set aside to cool slightly.
  17. In a medium bowl, whip 3 egg yolks with 1 1/2 tablespoons of sugar until the sugar dissolves and the yolks are light in color.
  18. In a separate clean bowl, whip 3 egg whites until foamy.
  19. While continuing to whip, gradually sprinkle in the remaining 1/4 cup sugar into the egg whites.
  20. Whip the egg whites until soft peaks form.
  21. Fold the whipped egg yolks into the melted chocolate mixture.
  22. Carefully fold the beaten egg whites into the chocolate mixture until well combined, being gentle to maintain airiness.
  23. Pour an even layer of the chocolate tart mixture over the bananas in the tart shell.
  24. Bake in the preheated oven for approximately 20 minutes, or until the crust turns golden-brown and the filling is set.
  25. Remove from the oven and let the tart cool slightly in the pan.
  26. Carefully remove the tart from the mold.
  27. Before serving, warm the slices slightly if desired.
