English Steak & Kidney Pie (British Isles)
Description
This traditional English Steak and Kidney Pie is the ultimate comfort food, featuring tender chunks of beef and lamb kidney slow-simmered in a rich, savory gravy with carrots, mushrooms, and onions. The filling is encased in a flaky, golden pastry crust that puffs up beautifully during baking. It is a robust, warming dish perfect for chilly evenings or a special weekend dinner. The combination of earthy mushrooms, sweet carrots, and the distinct flavor of kidney creates a complex, satisfying taste that feels both homely and refined. Serve with mashed potatoes or crusty bread to soak up every drop of the delicious sauce.Ingredients
Directions
-
Prepare the kidneys by removing the skin and any coarse or white fatty parts.
-
Rinse the cleaned kidneys thoroughly in salted water, then cut them into 1-inch cubes.
-
Cut the round steak into 1-inch cubes and pat both the beef and kidneys dry.
-
Combine flour, salt, and pepper in a shallow dish to create a seasoned dredge.
-
Dredge the beef and kidney cubes in the seasoned flour, shaking off any excess.
-
Heat oil in a heavy-bottomed skillet or Dutch oven over medium-high heat.
-
Brown the beef cubes in batches until golden brown on all sides; remove and set aside.
-
In the same pan, add the chopped onions and browned kidneys, cooking until the kidneys are lightly browned.
-
Return the beef to the pan and cover with hot water.
-
Add the bay leaf, parsley sprigs, and celery tops to the liquid.
-
Cover the pan tightly and simmer gently for 1 hour, or until the meat is tender.
-
Transfer the meat and vegetables to a deep baking dish or casserole.
-
Add the sliced mushrooms and diced carrots to the baking dish with the meat.
-
In a small bowl, mix the 2 heaping tablespoons of flour with 1/2 cup cold water to form a smooth slurry.
-
Stir the flour slurry into the remaining cooking liquid in the pan and simmer for a few minutes until thickened.
-
Pour the thickened gravy over the meat and vegetables in the baking dish.
-
Roll out the pastry and place it over the top of the dish, sealing the edges and trimming any excess.
-
Bake in a preheated 350F (175C) oven for about 1 hour, or until the pastry is golden brown and cooked through.
