Ingredients

Directions

  1. Seed and chop the green chiles, peel and chop the ginger, and mince the garlic.
  2. In a blender or food processor, puree the chiles, ginger, garlic, cardamom, turmeric, cinnamon, cloves, and red wine until smooth.
  3. Cut the sirloin steak into 1/2-inch strips and chop the onions and bell peppers into similar-sized strips.
  4. Heat 6 tablespoons of oil in a large skillet or wok over medium-high heat.
  5. Brown the beef strips in the hot oil until evenly seared on all sides.
  6. Remove the beef from the pan and drain off all but 2 tablespoons of the oil.
  7. Add the chopped onions to the remaining oil and sauté until soft but not browned.
  8. Add the bell pepper strips and sauté for an additional 3 minutes.
  9. Pour in the chile-spice puree and bring the mixture to a boil, stirring constantly to prevent burning.
  10. Return the beef to the pan and mix thoroughly until all strips are coated in the sauce.
  11. Reduce the heat to low and simmer for 10 minutes, or until the beef is cooked through and tender.
