Description

This European Cocoa Fudge is a decadent treat that combines high-quality cocoa with rich butter and whole milk to create a luxuriously smooth confection. The deep chocolate flavor is balanced by a hint of salt and vanilla, resulting in a dessert that is both indulgent and comforting. Perfect for holiday gatherings, gift-giving, or simply satisfying a sweet tooth on a cozy evening, this fudge sets with a beautiful matte finish and a tender bite. While traditional methods require precise temperature control, the result is worth the effort. Serve in small squares alongside coffee or tea for an elegant finish to any meal.

Ingredients

Directions

  1. Line an 8-inch square baking pan with aluminum foil, leaving an overhang on the sides for easy removal. Lightly butter the foil.
  2. In a heavy-bottomed 4-quart saucepan, whisk together the sugar, European style cocoa, and salt until well combined.
  3. Stir in the whole milk until the mixture is smooth and no lumps remain.
  4. Place the saucepan over medium heat and bring the mixture to a rolling boil, stirring constantly to prevent the sugar from burning or sticking to the bottom.
  5. Once boiling, stop stirring and insert a candy thermometer. Boil without stirring until the mixture reaches 234&# 194;°F (112ðC) (soft-ball stage). This should take about 10-15 minutes.
  6. Remove the saucepan from the heat immediately. Add the butter and vanilla extract, but do not stir yet.
  7. Let the mixture cool at room temperature, undisturbed, until it reaches 110ðF. This cooling process is crucial for proper texture.
  8. Once cooled to 110ðF, beat the mixture vigorously with a wooden spoon or electric mixer until it thickens, loses its gloss, and begins to lighten in color.
  9. Quickly spread the fudge into the prepared pan, smoothing the top with a spatula.
  10. Allow the fudge to cool completely at room temperature until firm, about 2-3 hours.
  11. Lift the fudge out of the pan using the foil overhang. Cut into small squares and serve.
