Ingredients

Directions

  1. Rinse 1 pound of dry pinto beans thoroughly, picking out any rocks or debris, but do not soak them.
  2. In a large pot, combine the rinsed beans, chopped white onion, bacon squares, Mexican oregano, epazote sprig, and ground cumin.
  3. Pour in the beer and enough water to cover the beans by about 2 inches.
  4. Bring the mixture to a boil, then reduce heat to low and simmer gently for 1 to 1.5 hours until the beans are almost tender.
  5. Add the peeled, seeded, and chopped fresh tomatoes along with the sliced jalapeño peppers to the pot.
  6. Continue simmering until the beans are fully tender and the flavors have melded, adding more hot water if needed to maintain consistency.
  7. Stir in the chopped cilantro and simmer for an additional 30 minutes to allow the fresh herbs to infuse.
  8. Taste and add salt as needed.
  9. For a soupier consistency, remove about a quarter of the beans and mash them with a potato masher before returning them to the pot.
  10. Serve hot with fresh tortillas or as a side to grilled meats.
