Description

This Festive Turkey Casserole is the ultimate way to repurpose leftover holiday turkey into a comforting, family-friendly meal. Combining tender cubes of turkey with fluffy long-grain rice, earthy mushrooms, and vibrant green peppers, this dish offers a perfect balance of textures and flavors. The creamy sauce, enriched with whipping cream and sharp Parmesan cheese, binds everything together, while toasted almonds add a delightful crunch on top. Ingredients

Directions

  1. Cook the long-grain white rice according to the package directions, ensuring you do not add the included seasoning packet. Drain well and set aside.
  2. In a large mixing bowl, combine the cooked rice, chopped green pepper, minced onion, seasoned pepper, turkey broth, whipped cream, sliced mushrooms, cubed turkey, diced pimiento, and 3 tablespoons of the butter.
  3. Grease a 13x9x2-inch baking dish or a 3-quart casserole dish. Transfer the mixed ingredients into the dish and spread evenly.
  4. Cover the dish tightly with foil and bake in the preheated oven for 30 minutes.
  5. Remove the dish from the oven. Carefully remove the foil cover.
  6. Sprinkle the grated Parmesan cheese evenly over the top of the casserole. Dot the remaining 3 tablespoons of butter and the toasted sliced almonds over the surface.

Note

Storage: Allow the casserole to cool completely before covering and refrigerating. It will keep in the fridge for up to 3 days. Reheat in the oven at 350°F until warm.

Substitutions: You can use chicken broth instead of turkey broth if necessary. Leftover chicken works just as well as turkey.

Tip: If you prefer a crispier top, you can broil for the last 1-2 minutes instead of baking at 450°F, but watch closely to prevent burning the almonds.
