Description

This Fiesta Lasagne is a vibrant twist on the classic Italian comfort food, blending savory ground beef with spicy green chilies, zesty tomato sauce, and creamy cottage cheese. The layers of tender pasta absorb the rich, aromatic flavors of cumin and chili powder, creating a hearty and satisfying meal. Topped with sharp cheddar, cool sour cream, and briny green olives, it offers a perfect balance of heat, creaminess, and freshness. Ideal for busy weeknights or family gatherings, this dish is easy to assemble and even better when made ahead.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium skillet over medium heat, brown the lean ground beef until no longer pink. Drain excess fat.
  3. In a medium bowl, combine the tomato sauce, picante sauce, ground cumin, and chili powder to create the sauce mixture.
  4. In a separate bowl, stir the diced green chilies into the cottage cheese until well combined.
  5. Spread 1/2 to 1 cup of the tomato sauce mixture evenly over the bottom of a 9x13-inch baking dish.
  6. Place three pieces of uncooked lasagne noodles on top of the sauce.
  7. Spread half of the cottage cheese mixture over the noodles.
  8. Sprinkle half of the browned ground beef, thawed corn, sliced scallions, and 1 cup of the grated Cheddar cheese over the cottage cheese layer.
  9. Repeat the layers: spread remaining tomato sauce, place three more noodles, spread remaining cottage cheese, and sprinkle remaining beef, corn, scallions, and 1 cup of Cheddar cheese.
  10. Place the final three noodles on top. Pour any remaining sauce over the top noodles.
  11. Cover the dish tightly with aluminum foil and bake for 30 minutes.
  12. Remove the foil. Spread the sour cream (or yogurt) over the top, sprinkle with the reserved 1/2 cup Cheddar cheese, and scatter the green olives over the surface.
  13. Re-cover loosely with foil and bake for an additional 15 minutes, or until the pasta is tender and cheese is melted.
  14. Let the lasagne stand for 15 minutes before slicing and serving.
