Ingredients

Directions

  1. Prepare the salsa by combining 3 crushed garlic cloves, 2 chopped fresh ripe tomatoes, 1 chopped medium onion, 1 chopped canned jalapeño pepper, 1 tablespoon chopped fresh cilantro, 1 tablespoon lemon juice, 1/2 teaspoon dried oregano leaves, and 1 1/2 teaspoons vegetable oil in a small saucepan.
  2. Heat the salsa mixture over medium heat, stirring occasionally, until hot and bubbly, about 5 minutes. Keep warm.
  3. Preheat the broiler. If the cod fillets are large, cut them into 6 equal serving pieces.
  4. Place the fish on a rack in a broiler pan.
  5. In a small bowl, mix the melted margarine, 1 tablespoon chopped fresh cilantro, 1/2 teaspoon salt, and 1 crushed garlic clove.
  6. Brush half of the margarine mixture over the fish fillets.
  7. Broil with the tops of the fillets about 4 inches from the heat until light brown, about 6 minutes.
  8. Turn the fish carefully and brush with the remaining margarine mixture.
  9. Broil until the fish flakes easily with a fork, about 4-6 minutes longer.
  10. Serve immediately with the warm garlic salsa.
