Description

These Flank Steak Pinwheels are a show-stopping main course that combines tender beef with bold, savory flavors. The steak is butterflied and seasoned with a zesty Creole spice blend, then spread with a rich mixture of roasted garlic, minced anchovies, and Parmesan cheese. Wrapped in crispy bacon and secured with skewers, each pinwheel offers a perfect balance of textures: the chewy, juicy meat, the creamy garlic paste, and the smoky crunch of the bacon. Ideal for weeknight dinners or casual gatherings, this recipe transforms simple ingredients into an elegant dish. The anchovies provide a deep umami backbone without overpowering the beef, while the Creole spices add a gentle heat that complements the sweetness of the roasted garlic. Serve with a side of grilled vegetables or a crisp salad for a complete meal.

Ingredients

Directions

  1. Preheat your grill to medium-high heat.
  2. Butterfly the flank steak by cutting it horizontally through the middle, leaving one end attached, to create a flat, thin rectangular sheet.
  3. Generously season both sides of the flattened steak with Creole spice, salt, and pepper.
  4. In a small bowl, combine the roasted garlic cloves, minced anchovies, grated Parmesan cheese, and a pinch of black pepper.
  5. Mash the mixture together, adding olive oil a few drops at a time until it forms a spreadable paste.
  6. Spread the garlic-anchovy mixture evenly over the entire surface of the seasoned steak.
  7. Lay the bacon slices across the steak to cover the entire surface evenly.
  8. Tightly roll up the steak from the long side in a jelly-roll fashion.
  9. Slice the roll into 1 1/2-inch thick pinwheels.
  10. Secure each pinwheel by inserting a soaked wood skewer through the center.
  11. Place the pinwheels on the preheated grill and cook for about 4 minutes per side, or until cooked to medium doneness.
  12. Remove from grill, let rest for a few minutes, then garnish with chopped parsley before serving.

Note

Soak wooden skewers in warm water for at least 30 minutes before use to prevent them from burning on the grill.

If you do not have roasted garlic, you can roast a head of garlic in the oven at 400F (200C) for 40 minutes until soft and golden.

For a milder flavor, reduce the amount of Creole spice or omit the anchovies, though they add significant depth to the dish.

Ensure the steak is cooked to your desired doneness; flank steak is best served medium-rare to medium to remain tender.

Serve with homemade Worcestershire sauce or a simple chimichurri for extra flavor.
