Description

This Fried Beef Sauce is a robust and aromatic condiment that elevates simple noodles or rice bowls into a feast. The dish relies on the high-heat technique of stir-frying to develop a deep, caramelized flavor profile in the minced beef. Key ingredients include savory soy sauce, pungent fish sauce, and a hint of sweetness to balance the saltiness, creating a glossy, clingy sauce. The addition of aromatics like garlic and shallots provides a fragrant base, while green chilies offer a fresh, spicy kick. Perfect for weeknight dinners or as a flavorful topping for cold noodles, this sauce is quick to prepare but packed with complex, home-style American-Asian fusion flavors.

Ingredients

Directions

  1. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add sliced shallots and stir-fry until soft and translucent.
  2. Add minced garlic to the pan and stir-fry for 30 seconds until fragrant, being careful not to burn it.
  3. Increase heat to high and add minced beef. Stir-fry, breaking up any clumps, for 3 minutes until the beef is browned and cooked through.
  4. Stir in soy sauce, fish sauce, sugar, and the cornstarch mixture. Cook for 2-3 minutes, stirring constantly, until the sauce thickens and becomes glossy.
  5. Season with salt and pepper to taste. Remove from heat immediately to prevent overcooking.
  6. Serve the hot beef sauce over noodles or rice. Garnish with hard-boiled quail eggs and a side of green chilies marinated in lime juice.

Note

For the green chili garnish, slice fresh chilies thinly and soak in lime juice for 10 minutes before serving to soften them and add brightness.

If you do not have fish sauce, you can substitute with a little extra soy sauce and a dash of oyster sauce for umami.

Ensure your wok is very hot before adding the beef to achieve a good sear and prevent the meat from steaming.

Store any leftover sauce in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water if it thickens too much.
