Fried Chicken Sauce
Description
This recipe provides a robust Cajun-style injection sauce and seasoning blend designed specifically for deep-frying a whole turkey. The sauce combines melted butter with finely chopped onions, celery, garlic, and green peppers, seasoned with cayenne, salt, and Worcestershire sauce for a deep, savory flavor profile. By injecting this aromatic puree directly into the meat, you ensure every bite is moist and flavorful, while the external dry rub creates a crispy, seasoned crust. Ideal for holiday gatherings or large family dinners, this method transforms a standard roasted bird into a golden, crispy masterpiece. The combination of fresh aromatics and heat from the peppers balances the richness of the turkey, delivering a hearty, satisfying meal that brings restaurant-quality flavor to your home kitchen.Directions
-
In a large skillet, melt the unsalted butter over high heat until half melted.
-
Add the chopped onions and sauté for about 3 minutes, stirring occasionally.
-
Add the chopped celery, minced garlic, green peppers, salt, cayenne, and black pepper.
-
Cook until the mixture is a rich golden brown, about 3 minutes, stirring and scraping the pan bottom frequently.
-
Add the chicken stock and Worcestershire sauce and bring to a boil, stirring constantly.
-
Remove from heat and allow to cool slightly.
-
Blend the mixture on highest speed until it becomes a very smooth puree, pushing sides down as needed.
-
Rinse the turkey inside and out and drain well.
-
Remove the giblets, neck, and any pop-up doneness indicators from the turkey.
-
Pour the cooled puree into a food injector.
-
Inject the puree into the turkey, inserting the needle to the bone or the depth of the needle without piercing through the cavity.
-
Fill the injection hole with as much puree as possible, drawing the needle out slowly while injecting firmly.
-
Make injection holes about 2 inches apart, focusing on the meatiest areas of the breast and legs.
-
Be sure to inject some puree into the upper joint of the wings.
-
Pour any remaining puree into the cavity of the turkey and rub it over the inner surface.
-
In a small bowl, combine the dry seasoning mix: salt and cayenne.
-
Sprinkle the seasoning mix evenly over the outside of the bird and inside the cavity, rubbing it in by hand.
-
Place the neck back inside the cavity and close the legs with the metal prong or kitchen twine.
-
Cover the turkey and refrigerate overnight to allow flavors to penetrate.
-
Remove the turkey from the refrigerator and let it come to room temperature for 1 hour before frying.
-
Set up your outdoor propane burner and deep pot (8 gallon or larger) on a level, non-slip surface.
-
Place the turkey on its back inside the fry basket and place the basket in the empty pot to measure the required oil level.
-
Remove the basket and turkey, then fill the pot with vegetable or peanut oil to the marked level.
-
Heat the oil to 400°F (204°C).
-
VERY CAREFULLY AND SLOWLY lower the basket containing the turkey into the hot oil.
-
Immediately adjust the flame down to maintain an oil temperature of approximately 350°F (177°C).
-
Fry the turkey for 35 to 45 minutes, ensuring it remains submerged and the oil bubbles steadily but does not smoke.
-
Remove the basket from the oil when the juices run clear and the skin is dark brown and crispy.
-
Place the turkey breast-side down on a platter lined with paper bags to drain for 5 minutes.
-
Turn the turkey over and let it rest for 15 minutes before carving.
