Description

This appetizer features sweet onions cut into wedges, coated in seasoned flour and beer batter, then deep-fried until golden and crisp. It is served with a rich, creamy chili sauce made from mayonnaise, sour cream, and tomato chili sauce. The combination of the crunchy onion and the tangy, spicy dip makes for a satisfying and flavorful snack.

Directions

  1. Prepare the Seasoned Flour: Combine the flour, paprika, garlic powder, black pepper, and cayenne pepper in a bowl. Mix well.
  2. Prepare the Batter: In a separate bowl, combine the cornstarch, flour, minced garlic, paprika, salt, and black pepper. Mix until well blended. Add the beer and mix well. Adjust the thickness of the batter with more beer if necessary.
  3. Prepare the Sauce: Combine the mayonnaise, sour cream, tomato chili sauce, and cayenne pepper. Mix well.
  4. Prepare the Onions: Cut about 3/4 inch off the top of each onion and peel. Cut 12 to 16 vertical wedges into each onion, but do not cut through the bottom root end. Remove about 1 inch of petals from the center of the onion. You may want to separate the onion petals slightly, but do not do this too much as you will destroy the onion.
  5. Optional Blanching: Place the onion down face first into boiling water for 1 1/2 minutes, then place it face down in ice water. This will help the petals to open more readily.
  6. Coat the Onions: Dip each onion in the seasoned flour, removing excess by shaking. Separate the petals to coat thoroughly with batter. Dip in the batter, then dip in the flour mixture again.
  7. Fry the Onions: Gently place the coated onions in a fryer basket and deep-fry at 375 to 400°F (190 to 204°C) for 1 1/2 minutes. Turn over and fry for an additional 1 1/2 minutes.
  8. Finish and Serve: Drain on paper towels. Place the onion upright in a shallow bowl and remove the center core with a circular cutter or apple corer. Serve hot with the Creamy Chili Sauce.
