  1. Heat half the oil in a large deep frying pan over moderate heat.
  2. Add onion; cook and stir for 6 minutes or until golden.
  3. Add 2 teaspoons of the spice mixture; cook and stir for 10 seconds or until fragrant.
  4. Add rice; stir to coat.
  5. Add chickpeas, apricots, and stock; bring to the boil.
  6. Reduce heat; simmer, covered, for 10 minutes until rice is tender and stock has been absorbed.
  7. Meanwhile, heat a char-grill pan over high heat.
  8. Brush lamb with remaining oil; sprinkle with remaining spice.
  9. Cook lamb for 4 minutes each side for medium or until cooked to your liking.
  10. Transfer lamb to a heatproof plate. Cover with foil; rest for 5 minutes. Slice.
  11. Stir currants, mint and almonds to rice.
  12. Top with lamb, yoghurt and extra mint. Serve with toasted pitta bread, halved.
