  1. Reduce the heavy cream in a large saucepan over medium heat, stirring occasionally, until it decreases to 1 1/2 cups, about 20 minutes. Set aside.
  2. Julienne the chili, red bell pepper, and onion. Scrape the kernels off the ear of corn.
  3. Melt butter in a heavy medium skillet over low heat.
  4. Add the julienned chili, bell pepper, onion, corn kernels, and minced garlic to the skillet. Sauté until slightly softened, about 4 minutes.
  5. Transfer the sautéed vegetables to a bowl and set aside.
  6. Pour tequila into the hot skillet and bring to a boil, scraping up any browned bits from the bottom.
  7. Stir in the reduced cream, the reserved vegetables, chili powder, and ground cumin.
  8. Season with salt, fresh ground pepper, and cayenne pepper to taste.
  9. Simmer the sauce until it thickens to a creamy consistency, about 5 minutes. Keep warm in the top of a double boiler over warm water.
  10. Heat vegetable oil in a deep fryer or large skillet to 375°F (191°C).
  11. In a medium bowl, combine 1 cup instant masa, 1 cup all-purpose flour, and 2 1/2 tablespoons Cajun seasoning. Mix well.
  12. Dredge the shucked oysters in the masa-flour mixture, coating them evenly.
  13. Carefully add the dredged oysters to the hot oil in batches. Fry until golden brown and crisp, about 1 minute per batch.
  14. Transfer the fried oysters to a plate lined with paper towels using a slotted spoon to drain excess oil.
