Ingredients

Directions

  1. Heat 2 tablespoons of vegetable oil in a large frying pan over medium heat.
  2. Add the onion and a pinch of salt to the hot oil.
  3. Sauté the onion over very low heat for 5 minutes, until translucent.
  4. Add the garlic and sauté for a further 1-2 minutes over very low heat to soften, being careful not to burn it.
  5. Add all remaining base ingredients (excluding coriander) to the pan.
  6. Stir to combine and gently fry for 3-4 minutes until warm.
  7. Transfer the mixture to a food processor and blitz for 3 minutes, scraping down the sides as needed, until reduced to a fine texture.
  8. Transfer the mixture to a bowl, cover, and refrigerate for at least 1 hour to stiffen.
  9. Place 3 chipotle chilies and the sauce ingredients into a blender and blitz to a fine paste.
  10. Taste the sauce to check the heat level and adjust salt if necessary.
  11. Add further chilies one at a time, blending and tasting between each addition, until desired heat is reached.
  12. Press the mixture through a sieve into a saucepan, discarding the solids in the sieve.
  13. To serve, gently warm the sauce in the pan over very low heat.

Note

Store the sauce in an airtight container in the refrigerator for up to one week. The flavors will deepen as it sits.

For a milder version, use fewer chipotle chilies or remove the seeds before blending. For extra heat, add more chilies or a dash of hot sauce.

This sauce pairs well with grilled chicken, fish tacos, roasted vegetables, or as a dip for fried foods.

If the sauce is too thick after refrigeration, add a splash of vegetable stock or water to reach the desired consistency.
