  1. Process the raw shrimp in a food processor until a smooth, fine paste is formed.
  2. Clean the mushrooms and remove the stems, leaving the caps intact.
  3. Press a small amount of the shrimp paste into each mushroom cap, filling them evenly.
  4. Dust the top of each stuffed mushroom lightly with cornstarch to help seal the filling.
  5. Heat oil in a deep fryer or heavy pot to 350&# 194;°F (175°C).
  6. Deep-fry the stuffed mushrooms in batches for about 2 minutes, or until golden brown and crispy.
  7. Remove mushrooms from oil and drain on paper towels.
  8. Divide the fried mushrooms among 4 serving plates.
  9. Dip each sprig of watercress or parsley into the tempura batter.
  10. Fry the battered greens in the hot oil until the batter is golden brown and crisp.
  11. Remove the fried greens, drain, and place them beside the mushrooms on the plates.
  12. Garnish each serving with 1/2 tablespoon of the grated daikon chili mixture.
  13. To make the dipping sauce, combine the dashi stock, sugar, and dark soy sauce in a small saucepan.
  14. Warm the sauce gently, stirring until the sugar is fully dissolved.
  15. Divide the warm dipping sauce among 4 small bowls and serve immediately with the fried appetizers.
