Description

These Fried Yam Puffs, known as Epok-Epok Keladi, are a delightful Southeast Asian street food snack. The exterior consists of mashed yam mixed with tapioca flour, creating a slightly chewy and crispy shell when deep-fried. Inside, the filling offers a complex flavor profile with savory minced meat, sweet prawns, and aromatic vegetables like onions and mushrooms, balanced by a hint of palm sugar (gula melaka). The texture contrast between the fluffy yam dough and the rich, juicy filling makes this dish irresistible.

Directions

  1. Steam the yam pieces until tender when pierced with a fork.
  2. Remove the yam from heat and mash it thoroughly until smooth.
  3. While the yam is still warm, mix in the softened butter, tapioca flour, salt, MSG, and sugar.
  4. Knead the mixture until it forms a soft, pliable dough. Cover and set aside to cool slightly.
  5. Heat 2 tablespoons of cooking oil in a wok or large pan over medium heat.
  6. Add the minced meat and prawns, stir-frying for about 1 minute until the meat changes color.
  7. Add the chopped onions, spring onions, and diced mushrooms. Stir-fry for another minute until fragrant.
  8. Stir in the salt, MSG, sugar, soy sauce, and oyster sauce.
  9. Pour in the cornflour mixture and stir well until the sauce thickens.
  10. Add the green peas and stir until heated through. Remove from heat and let the filling cool completely.
  11. Divide the yam dough into 20-25 equal portions.
  12. Roll each portion into a ball and flatten it into a small disc on your palm or a floured surface.
  13. Place a teaspoon of the cooled filling in the center of each disc.
  14. Moisten the edges of the dough with water, then fold over and seal tightly, ensuring no filling leaks out.
  15. Heat oil for deep frying in a deep pan or wok to 350°F (175°C).
  16. Carefully lower the puffs into the hot oil, frying a few at a time to avoid overcrowding.
  17. Deep fry for 3-5 minutes, turning occasionally, until golden brown and crispy.
  18. Remove with a slotted spoon and drain on paper towels.
  19. Serve hot as a snack or appetizer.
