  1. Peel the yucca root down to the white flesh.
  2. Place the peeled yucca in boiling water and boil for 20 minutes until tender.
  3. Remove the yucca from the water and let it cool completely.
  4. While the yucca cools, prepare the sauce by mashing the feta cheese and egg yolks together with a fork.
  5. Mix the chopped chile pepper and salt into the feta mixture using beaters.
  6. Pour in the vegetable oil for the sauce a little at a time while beating continuously to emulsify.
  7. Add the evaporated milk and lemon juice and beat well until smooth.
  8. Rinse the chopped onion in the boiling water used for the yucca until tender, then drain and mix into the sauce.
  9. Once cooled, cut the yucca into slices, ensuring you remove the tough center fibers.
  10. Heat the remaining vegetable oil in a pan over medium heat.
  11. Pan-fry the yucca slices until golden brown and crisp.
