Ingredients

Directions

  1. Drain the crushed pineapple, reserving approximately 1 3/4 cups of the juice. Set the pineapple aside.
  2. Cook the acini di pepe pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
  3. In a medium saucepan, whisk together the sugar, flour, salt, and the reserved pineapple juice until smooth.
  4. Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly.
  5. In a small bowl, beat the eggs well.
  6. Slowly pour the beaten eggs into the boiling pineapple mixture while stirring vigorously to prevent curdling.
  7. Reduce the heat to low and continue cooking for 1-2 minutes, stirring constantly, until the mixture thickens slightly.
  8. Remove the saucepan from heat and allow the sauce to cool completely to room temperature.
  9. In a large mixing bowl, combine the cooled pasta and the cooled pineapple sauce. Mix well.
  10. Cover the bowl and refrigerate the mixture for 3-4 hours to chill thoroughly.
  11. After chilling, drain the mandarin oranges.
  12. Fold the mini marshmallows, drained mandarin oranges, and crushed pineapple into the chilled pasta mixture.
  13. Gently fold in the defrosted Cool Whip until evenly distributed.
  14. Cover and refrigerate for at least one more hour before serving to allow flavors to set.

Note

Ensure the pineapple sauce cools completely before mixing with the pasta to prevent the marshmallows from melting prematurely and to maintain the texture of the Cool Whip.

For a lighter version, you can substitute the Cool Whip with whipped cream or Greek yogurt, though the texture will be slightly less airy.

This salad tastes best when made a day ahead, allowing the flavors to meld together fully. Store covered in the refrigerator for up to 4 days.

Acini di pepe is a small, pearl-shaped pasta that gives the dish its signature "frog eye" appearance. If unavailable, small elbow macaroni can be used as a substitute, though the texture will differ slightly.
