Description

These Gala Chicken Breasts are a sophisticated yet approachable main course that feels special enough for holiday gatherings or date nights. The tender chicken is pounded thin, filled with a rich mixture of hard-cooked eggs, mayonnaise, and fresh herbs, then rolled tightly to create beautiful pinwheels when sliced. Baked until golden and brushed with a savory lemon-butter glaze, they offer a perfect balance of creamy texture and bright, herbaceous flavors. The addition of Dijon mustard adds a subtle tang that cuts through the richness of the filling. This dish is visually impressive but surprisingly simple to prepare, making it an excellent choice for entertaining without spending all day in the kitchen. Serve with roasted vegetables or a simple green salad for a complete meal.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. In a medium bowl, combine mayonnaise, 2 tablespoons of freeze-dried chives, crushed tarragon leaves, 1/2 teaspoon salt, 1 tablespoon lemon juice, and 2 tablespoons Dijon mustard. Mix well.
  3. Stir the finely chopped hard-cooked eggs into the mayonnaise mixture until evenly combined. Set aside.
  4. Place each chicken breast half between sheets of waxed paper or plastic wrap. Use a rolling pin to gently pound each breast to a uniform 1/4-inch thickness.
  5. Brush each flattened chicken breast with the beaten egg.
  6. Spread approximately 1/4 cup of the egg salad mixture evenly over each breast, leaving a small border around the edges.
  7. Starting from the narrowest end, carefully roll up each filled breast, tucking in the sides as you roll to seal the filling inside.
  8. Place the filled rolls seam-side down in a greased 13x9-inch baking dish.
  9. In a small bowl, mix the melted butter with the remaining 1 tablespoon lemon juice and the remaining freeze-dried chives. Brush this mixture over the top of each chicken roll.
  10. Bake in the preheated oven for 30 to 35 minutes, or until the chicken is cooked through and no longer pink in the center.
  11. Remove from oven and sprinkle lightly with paprika before serving.

For best results, ensure chicken breasts are pounded to an even thickness to promote uniform cooking.

If you prefer a smoother filling, blend the egg mixture briefly in a food processor before spreading.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.

Feel free to substitute fresh chives and tarragon if available, adjusting quantities to taste.
