Description

This hearty turkey loaf is a comforting twist on traditional meatloaf, packed with savory spinach, fresh horseradish, and aromatic herbs. The addition of egg white keeps the texture light while maintaining moisture, and the ketchup glaze adds a sweet-tart finish that balances the savory spices. Perfect for weeknight dinners or meal prep, it serves a crowd easily and slices beautifully for sandwiches the next day. It&# 226;ÂÂs a satisfying, home-style main that brings everyone to the table.

Ingredients

Directions

  1. Preheat the oven to 350 degrees Fahrenheit (177ðC).
  2. Spray a 9x5x2 3/4-inch loaf pan with no-stick cooking spray.
  3. In a large mixing bowl, combine the ground turkey, chopped carrot, onion, celery, beaten egg white, herb stuffing, horseradish, squeezed spinach, salt, pepper, and 2 tablespoons of ketchup.
  4. Mix thoroughly until all ingredients are evenly distributed.
  5. Transfer the mixture to the prepared loaf pan, pressing down firmly to remove air pockets.
  6. Bake in the center of the oven for 50 to 60 minutes, or until an instant-read thermometer inserted into the center registers 160 degrees Fahrenheit.
  7. While the loaf bakes, mix the remaining 1/4 cup of ketchup with a little water if desired to create a glaze, and brush over the top during the last 10 minutes of cooking.
  8. Remove from oven and let cool in the pan for 10 minutes.
  9. Transfer the loaf to a serving platter and let cool for another 5 minutes before slicing.

Note

Ensure the spinach is thoroughly squeezed dry to prevent a soggy loaf.

For a richer flavor, you can use whole eggs instead of just the egg white, though the white keeps the loaf lighter.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. They make excellent sandwiches the next day.

You can freeze the unbaked loaf for up to 3 months. Thaw overnight in the refrigerator before baking.
