Ingredients

Directions

  1. Shell and devein the shrimp. Wash and drain them, then sprinkle lightly with lemon juice.
  2. Heat the oil or butter in a frying pan over medium heat. Add the minced onion (or shallot) and cook until soft and translucent.
  3. Add the tomato sauce, chopped tomatoes, crushed garlic, chopped parsley, basil (or dill), salt, and freshly ground pepper to the pan.
  4. Simmer the sauce for 25 minutes, stirring occasionally. Remove from heat and strain if a smoother texture is desired.
  5. Preheat the oven to 350ðF (175ðC). Butter large scallop shells or individual ovenproof dishes.
  6. Spoon a little of the prepared sauce into each dish. Fill with the shrimp and spoon the remaining sauce over the top.
  7. Crumble the feta cheese evenly over the shrimp and sauce in each dish.
  8. Place the dishes in a baking pan and bake for 15 to 20 minutes, or until the shrimp is cooked through and the cheese is melted and bubbly.
  9. Garnish with fresh basil leaves or parsley and serve hot.
