Description

This elegant Greek dish, Garides Kokkiyia Me Feta, features succulent shrimp nestled in their shells and baked with a robust tomato sauce infused with garlic, herbs, and crumbled feta. The combination of briny seafood and salty, creamy cheese creates a luxurious flavor profile that is both comforting and sophisticated. Perfect for a special weeknight dinner or a dinner party appetizer, this recipe brings the taste of the Aegean coast to your table. The fresh basil and lemon notes brighten the rich sauce, while the baked feta adds a delightful texture. Serve hot with crusty bread to soak up every drop of the savory sauce.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. Shell and devein the shrimp, leaving the tails on if desired. Wash, drain, and sprinkle lightly with lemon juice.
  3. Heat the vegetable oil or butter in a frying pan over medium heat.
  4. Add the minced onion (or shallot) and cook until soft and translucent, about 3-5 minutes.
  5. Add the tomato sauce, chopped tomatoes, crushed garlic, parsley, basil (or dill), salt, and pepper to the pan.
  6. Simmer the sauce for 25 minutes, stirring occasionally, until thickened. Remove from heat and strain if a smoother consistency is desired.
  7. Butter large scallop shells or individual ovenproof dishes lightly.
  8. Spoon a small amount of the tomato sauce into the bottom of each shell or dish.
  9. Place the shrimp into the shells on top of the sauce.
  10. Spoon the remaining tomato sauce over the shrimp.
  11. Crumble the feta cheese over the top of each serving.
  12. Place the shells or dishes into a baking pan to hold them steady.
  13. Bake for 15-20 minutes, or until the shrimp is cooked through and the cheese is melted and bubbly.
  14. Garnish with fresh basil or parsley leaves and serve hot.

Note

You can use raw or pre-cooked shrimp. If using pre-cooked shrimp, reduce the baking time to 10-12 minutes just to heat the sauce and melt the cheese.

If scallop shells are not available, use ramekins or small ovenproof bowls.

For a richer sauce, add a splash of white wine or a tablespoon of heavy cream to the tomato sauce while simmering.

Feta can be substituted with ricotta salata or kefalotyri for a different texture, though feta provides the classic Greek flavor.

This dish pairs well with crusty bread, Greek salad, or orzo pasta.

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave.
