Garlic Bread Salad With Black Beans & Salsa
Description
This unique salad transforms simple ingredients into a satisfying meal. Crispy baguette slices are spread with homemade roasted garlic paste, providing a savory base for the toppings. A mixture of whole and mashed black beans adds heartiness and texture, while a bright salsa of red and yellow tomatoes, onions, and jalapeño brings fresh acidity and heat. The combination of warm, garlicky bread and cool, fresh salsa creates a delightful contrast. It is a perfect vegetarian option for summer gatherings or a quick, flavorful lunch that feels both rustic and refined.Ingredients
Directions
-
Combine garlic cloves and olive oil in a 12-inch nonstick skillet.
-
Cook over medium-low heat, stirring occasionally, until garlic is golden brown and soft when pressed, about 15 minutes.
-
Transfer browned garlic cloves from the pan using a slotted spoon.
-
Discard all but 1 tablespoon of the cooking oil remaining in the pan.
-
Return the garlic cloves to the pan and mash with a fork or potato masher to create a paste.
-
In a bowl, mix red and yellow tomatoes, red onion, green onions, jalapeo, cilantro, and lime juice to make the salsa.
-
Drain the black beans, reserving about a quarter of them on a rimmed plate or shallow bowl.
-
Pour the liquid from the tomato salsa mixture onto the plate with the reserved beans.
-
Mash the beans on the plate into a smooth paste, then stir in the remaining whole beans.
-
Cut the baguette in half lengthwise.
-
Broil the bread halves 3 to 4 inches from the heat until lightly toasted, about 1 minute.
-
Spread the garlic paste equally over the toasted bread halves.
-
Return the bread to the broiler for about 10 seconds to warm slightly.
-
Cut the bread into 8 equal pieces and arrange 1 or 2 pieces on each plate.
-
Mound the bean mixture on top of the bread.
-
Top with the tomato salsa.
-
Season with salt and pepper to taste and serve immediately.

Note
Substitution: If fresh yellow tomatoes are unavailable, you can use yellow bell pepper pieces as a substitute for color and sweetness.
Shortcut: For a quicker version, you can use 1/3 cup of store-bought garlic spread. Warm it in the microwave at 70% power for 2 minutes, stirring in the olive oil after 1 minute, before spreading on the bread.
Storage: Best served immediately while the bread is crisp. Leftover salsa and bean mixture can be stored in the refrigerator for up to 2 days.
