Description

These savory garlic pancakes offer a unique twist on traditional breakfast fare, combining tender, self-rising batter infused with roasted garlic and sage. The pancakes are light yet satisfying, providing the perfect vessel for the accompanying ham sauce. This sauce is a decadent blend of browned roux, milk, and minced ham, creating a rich, velvety texture that complements the earthy notes of the sage. It is an ideal dish for a hearty brunch or a comforting dinner, bridging the gap between sweet morning pancakes and savory dinner plates.

Directions

  1. Mix together the butter and rubbed sage; reserve for later use.
  2. Remove as much outer skin from the heads of garlic as possible without piercing the individual cloves' covering.
  3. Place the garlic heads in a saucepan and cover with water.
  4. Boil gently for about 45 minutes, or until the cloves are quite soft.
  5. Remove the garlic from heat and let cool until easy to handle.
  6. Squeeze each clove to remove the cooked garlic by grasping the clove at the tip and pulling down toward the base.
  7. In a mixing bowl, beat the roasted garlic with a fork until smooth.
  8. Add 1 cup self-rising flour, the eggs, the oil, and 1-1/2 cups milk to the garlic mixture to make the pancake batter.
  9. Mince the remaining fresh garlic and add to the batter; set aside.
  10. Melt the remaining butter and keep warm for serving.
  11. Place half of the sage butter in a saucepan.
  12. Add 6 tablespoons of self-rising flour to the butter to make a roux.
  13. Cook the roux at medium temperature, stirring frequently, until it turns a nice brown color.
  14. Meanwhile, in a skillet, place the remaining sage butter and add the minced ham.
  15. Heat the ham through, but do not let it burn.
  16. When the roux is nicely browned, add the remaining milk.
  17. Allow the sauce to thicken, stirring frequently.
  18. Add the heated ham and skillet drippings to the sauce and mix well to create the ham sauce.
  19. Keep the ham sauce warm.
  20. Heat a griddle or clean skillet and grease lightly with a bit of the remaining sage butter.
  21. Drop batter by spoonfuls onto the griddle to make silver dollar-sized pancakes.
  22. Cook pancakes until golden brown on both sides.
  23. Serve the pancakes with the melted butter and ham sauce.
