Description

This elegant Gateau St. Honore is the quintessential French patisserie masterpiece, designed to impress at any celebration. It features a buttery puff pastry base surrounded by crisp, caramel-coated cream puffs. The center is filled with a luxurious dark chocolate and raisin mousse, crowned with beautiful alternating stripes of plain and chocolate whipped cream. The combination of textures—crunchy caramel, airy cream, and dense chocolate—creates a sophisticated flavor profile that balances sweetness with the subtle warmth of brandy.

Directions

  1. Heat brandy and golden raisins in a small saucepan over low heat until plumped. Remove from heat and set aside to soak.
  2. Chop 9 ounces of the semisweet chocolate into small pieces.
  3. Melt the chopped chocolate with the unsalted butter in the top of a double boiler placed over barely simmering water.
  4. Once melted, remove from heat immediately and whisk in the egg yolks until smooth.
  5. Stir the plumped raisins and brandy into the chocolate mixture.
  6. In a clean bowl, beat the egg whites until soft peaks form.
  7. Gently fold the beaten egg whites into the chocolate-raisin mixture.
  8. Cover the chocolate mousse and chill for at least 3 to 4 hours, or overnight, until firm.
  9. Roll out the puff pastry into a 12-inch circle, approximately 1/4-inch thick.
  10. Pierce the pastry all over with a fork to prevent excessive rising.
  11. Let the pastry rest for 25 minutes.
  12. Place on a baking sheet and bake at 450°F (232°C) until golden brown and puffed, about 15 to 20 minutes. Let cool completely.
  13. Meanwhile, spread the sugar evenly in a heavy skillet and cook over medium heat, stirring occasionally, until it melts and turns a deep golden amber color.
  14. Remove the caramel from heat immediately. Working quickly, use a fork to dip one half of each cream puff into the hot caramel.
  15. Place the caramel-dipped puffs on buttered parchment paper.
  16. Once the first side of caramel has set, dip the uncoated half of each puff into the remaining caramel.
  17. Allow the caramel-coated cream puffs to cool completely.
  18. Arrange the caramel-coated cream puffs around the edge of the baked puff pastry base.
  19. Spoon the chilled chocolate mousse into the center of the pastry, creating a mound.
  20. Melt the remaining 3 ounces of semisweet chocolate.
  21. Whip the whipping cream until soft peaks form.
  22. Fold the melted chocolate into half of the whipped cream to create chocolate whipped cream.
  23. Spoon the plain whipped cream into a pastry bag fitted with a large round tip.
  24. Pipe dome-shaped balls of plain whipped cream in rows over the chocolate mousse, leaving spaces between the rows.
  25. Fill the pastry bag with the chocolate whipped cream.
  26. Pipe dome-shaped balls of chocolate whipped cream into the spaces between the plain cream rows to create a striped effect.
