Description

This elegant German Ice Cream Torte is a show-stopping dessert that combines a crisp, dry-baked meringue crust with three distinct layers of rich, creamy filling. The base provides a satisfying crunch against the smooth texture of the whipped cream mixture, which is divided into chocolate, raspberry, and plain vanilla sections. Infused with a hint of sherry for depth, this torte offers a balance of sweet and tart flavors in every bite. It is perfect for summer gatherings or special celebrations, requiring no ice cream maker—just patience for the freezing process. Serve it chilled with chocolate shavings for a sophisticated finish that rivals any professional patisserie creation.

Directions

  1. Remove the rim from a 9-inch springform pan and cut a circle of brown paper to fit the bottom.
  2. Preheat oven to 275°F (135°C).
  3. In a clean bowl, beat egg whites and cream of tartar until foamy.
  4. Gradually add the 1/2 cup sugar, beating until stiff, glossy peaks form.
  5. Spread the meringue evenly onto the paper-lined pan bottom.
  6. Bake for 50 minutes, then turn off the heat and leave the meringue in the oven with the door closed for 1 hour to dry out completely.
  7. Remove from oven and let cool. Peel off the paper and place the meringue base back into the bottom of the springform pan. Replace the pan's rim.
  8. Sprinkle unflavored gelatin over cold water in the top of a double boiler. Let stand for 5 minutes to bloom.
  9. Add egg yolks, 2/3 cup sugar, and sherry to the gelatin mixture.
  10. Beat over simmering water, stirring constantly, until the mixture thickens and registers 160°F (71°C).
  11. Remove from heat and let the mixture cool to room temperature, stirring occasionally.
  12. Gently fold the cooled egg mixture into the 3 cups of whipped cream until fully combined.
  13. Divide the cream mixture into three equal portions.
  14. Stir cocoa into one portion. Fold drained raspberries into a second portion. Leave the third portion plain.
  15. Spread the cocoa mixture evenly over the meringue base in the pan.
  16. Freeze for 10 minutes until set.
  17. Spread the raspberry mixture over the cocoa layer.
  18. Freeze for another 10 minutes.
  19. Spread the plain cream mixture over the raspberry layer.
  20. Freeze for at least 8 hours, or until firm.
  21. To serve, remove the pan's rim and transfer the torte to a serving plate.
  22. Shave unsweetened chocolate over the top and sides of the torte.
  23. Pipe or mound 12 rosettes of whipped cream around the top edge.
  24. Top each rosette with a chocolate kiss.
  25. Let stand at room temperature for 10 minutes before slicing into wedges.
