This German White Chocolate Cake is a luxurious dessert featuring a light, airy sponge infused with melted white chocolate. The cake is layered with a rich, creamy frosting made from evaporated milk, butter, and egg yolks, studded with toasted pecans and shredded coconut. It offers a delightful balance of textures and flavors, making it a memorable centerpiece for any gathering.

Ingredients

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, sift together the cake flour and baking soda. Set aside.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add the egg yolks one at a time, beating well after each addition. Mix in the melted white chocolate and vanilla extract.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Fold in half of the shredded coconut and half of the chopped pecans.
  7. In a clean bowl, beat the egg whites until stiff peaks form.
  8. Gently fold one-third of the egg whites into the batter to lighten it, then fold in the remaining egg whites until no white streaks remain.
  9. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  11. For the frosting, combine evaporated milk and sugar in a heavy medium saucepan over medium heat. Bring to a boil, stirring frequently.
  12. Reduce heat to low and simmer for 10 minutes, stirring constantly, until the mixture thickens slightly.
  13. Remove from heat. Whisk in the egg yolks one at a time, then stir in the butter until melted and smooth.
  14. Stir in the vanilla extract, chopped pecans, and shredded coconut. Let the frosting cool to room temperature, stirring occasionally, until it thickens enough to spread.
  15. Place one cake layer on a serving platter. Spread half of the frosting evenly over the top.
  16. Place the second cake layer on top. Spread the remaining frosting over the top and sides of the cake.
  17. Refrigerate the cake for at least 30 minutes before slicing to allow the frosting to set.
