-
Dissolve 2 teaspoons of sugar in 1/2 cup of warm water in a small bowl.
-
Sprinkle the active dry yeast over the sugar water and let it sit for 10 minutes until frothy.
-
Combine 1 1/4 cups of water and vegetable shortening in a saucepan.
-
Heat the mixture over low heat just until the shortening melts, then remove from heat and cool to lukewarm.
-
In a large mixer bowl, combine the brown rice flour, white rice flour, xanthan gum, 1/4 cup sugar, and salt.
-
Add the yeast mixture to the dry ingredients and blend well.
-
Pour in the lukewarm shortening mixture and blend until incorporated.
-
Add the eggs to the bowl.
-
Mix at high speed with a dough hook or paddle attachment for 2 minutes until smooth.
-
Cover the bowl and let the dough rise in a warm place for about 1 hour, or until doubled in size.
-
Pour the dough into greased small bread pans, filling them 3/4 full, or shape into buns on a greased baking sheet.
-
Let the shaped bread rise again for 30-45 minutes.
-
Preheat oven to 400°F (200°C).
-
Bake at 400°F (204°C) for 10 minutes.
-
Place foil loosely over the tops of the breads to prevent over-browning.
-
Continue baking for 50 minutes, or until the bread sounds hollow when tapped.
-
Remove from pans immediately and cool on a wire rack.
