Description

This Giant Jack-O'-Lantern Cake is a show-stopping dessert that combines moist pumpkin spice cake layers with rich cream cheese frosting. Designed to resemble a carved pumpkin, it features a vibrant orange exterior and a green banana stem, making it an ideal centerpiece for Halloween parties or Thanksgiving gatherings. The cake itself is incredibly tender, infused with warm spices and walnuts, while the tangy frosting balances the sweetness perfectly. ItâÂÂs a fun, creative baking project that delights guests of all ages, turning a simple bundt cake into a festive work of art.

Directions

  1. Preheat oven to 325°F (165°C).
  2. Grease and flour two 10-inch bundt pans thoroughly.
  3. In a large bowl, whisk together half of the flour, half of the sugar, half of the pumpkin pie spice, half of the baking soda, and half of the baking powder.
  4. In a separate medium bowl, whisk together half of the eggs, half of the oil, and half of the vanilla until smooth.
  5. Add half of the pumpkin pie mix to the egg mixture and stir until combined.
  6. Pour the wet mixture into the dry ingredients and stir until just combined.
  7. Fold in half of the chopped walnuts.
  8. Divide the batter evenly between the two prepared bundt pans.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cakes cool in pans for 10 minutes, then invert onto wire racks to cool completely.
  11. While cakes cool, divide the cream cheese frosting into two bowls.
  12. Tint one-third of the frosting green for the stem.
  13. Tint the remaining frosting bright orange for the pumpkin body.
  14. Once cakes are completely cool, trim a thin slice (about 1/2 inch) from the flat top of each cake to create a flat surface for stacking.
  15. Place one cake on a serving platter with the fluted side facing down (flat trimmed side up).
  16. Spread a layer of orange frosting on the trimmed top of the bottom cake.
  17. Place the second cake on top, with the fluted side facing up (flat trimmed side down against the frosting).
  18. Cut a cardboard circle slightly smaller than the top hole of the upper cake to support the stem.
  19. Place the cardboard circle in the center hole of the top cake.
  20. Cut a 1/3-inch thick slice from the unpeeled banana.
  21. Place the banana slice on top of the cardboard circle.
  22. Frost the banana slice and the cardboard area with the green frosting to create the stem.
  23. Frost the entire exterior of the stacked cake with the orange frosting, smoothing it out to resemble a pumpkin.
  24. Use a piping bag with brown or black frosting (or additional orange frosting) to pipe a jack-o'-lantern face onto the side of the cake.
