Description

This Gingered Shrimp dish is a vibrant and aromatic weeknight dinner that balances savory umami with bright citrus notes. Large shrimp are quickly marinated in a blend of soy sauce, mirin, and sesame oil, then stir-fried to perfection until just pink. The dish is paired with crisp-tender asparagus spears cooked in a light chicken broth reduction thickened with cornstarch for a glossy, clingy sauce. Fresh orange and lemon peels add a sophisticated floral aroma, while julienned green onions provide a fresh crunch. Served over fluffy long-grain rice, this meal comes together in under 30 minutes. It is light enough for a summer evening yet hearty enough to satisfy cravings. Perfect for busy nights when you want restaurant-quality flavor without the fuss.

Directions

  1. In a medium bowl, combine the shrimp, minced green onions, soy sauce, mirin, 1 tablespoon sesame oil, hot chili oil, grated orange peel, and grated lemon peel.
  2. Cover the bowl and refrigerate the shrimp mixture for 2 to 3 hours, turning occasionally to ensure even marination.
  3. In a small bowl, whisk together 1/2 cup of the chicken broth, dry sherry, and cornstarch until smooth. Set aside.
  4. Coat a heavy large skillet with nonstick vegetable oil spray. Add the remaining 1 tablespoon of sesame oil and heat over high heat.
  5. Add the shrimp with its marinade to the hot skillet. Stir-fry until the shrimp just turn pink, about 2 minutes.
  6. Transfer the cooked shrimp to a clean bowl using a slotted spoon.
  7. Add the asparagus pieces and the remaining 1/4 cup of chicken broth to the skillet.
  8. Reduce the heat to medium-low, cover the skillet, and cook until the asparagus is crisp-tender, about 5 minutes.
  9. Stir the cornstarch mixture again to recombine, then add it to the skillet with the asparagus.
  10. Return the shrimp to the skillet. Stir constantly until the sauce turns translucent and thickens, about 2 minutes.
  11. Mix in the julienned green onions.
  12. Mound the cooked rice on a deep platter. Ladle the shrimp and asparagus mixture over the rice.
  13. Garnish with orange peel julienne and serve immediately.
