Description

This Glazed Apple Tart is a timeless dessert that showcases the natural sweetness of Granny Smith apples against a buttery, flaky pastry crust. The apples are arranged in overlapping circles, baked until tender, and then flipped onto a warm plate for a stunning presentation. A simple apricot and lemon juice glaze adds a beautiful shine and a bright, fruity finish that cuts through the richness of the dough. Perfect for autumn gatherings or a cozy weekend treat, this tart is elegant yet approachable.

Directions

  1. Preheat oven to 375°F (190°C).
  2. Butter an 8-inch round baking pan.
  3. In a bowl, sift together the flour and salt.
  4. Add the cold butter cubes to the flour mixture and cut in until the mixture resembles coarse bread crumbs.
  5. Stir in 1 tablespoon of sugar, the egg yolk, and cold water.
  6. Knead gently until the dough comes together and is smooth.
  7. Wrap the dough and chill in the refrigerator for 15 minutes.
  8. Meanwhile, peel, core, and slice the apples into fairly thin slices.
  9. Arrange a layer of apple slices in overlapping circles in the bottom of the prepared pan.
  10. In a small bowl, toss the remaining apple slices with the lemon peel, cornstarch, cinnamon, nutmeg, and the remaining 2 tablespoons of sugar.
  11. Spoon the spiced apple mixture on top of the arranged apple slices in the pan.
  12. On a floured surface, roll out the chilled pastry dough into an 8-inch circle.
  13. Place the pastry over the apples and press gently to fit the pan.
  14. Prick the pastry several times with a fork to allow steam to escape.
  15. Bake in the preheated oven for 40 minutes, or until the pastry is golden brown.
  16. Remove from oven and let cool for 5 minutes.
  17. Carefully turn out the tart onto a warm serving plate.
  18. In a small saucepan, combine the apricot jam and lemon juice.
  19. Heat gently over low heat, stirring until melted and smooth.
  20. Spoon the hot jam mixture evenly over the top of the tart.
  21. Serve hot or cold with whipped cream and garnish with mint sprigs if desired.
