Glazed Venison Pate
Description
This sophisticated Glazed Venison Pate is a classic French-inspired dish that balances the gamey richness of venison with the savory depth of pork belly and chicken livers. The addition of fresh orange and lemon zest provides a bright, zesty contrast that cuts through the fat, while thyme and garlic infuse the mixture with aromatic warmth. Perfectly smooth and spreadable, this terrine is ideal for entertaining or special occasion dinners. Serve with crusty bread, cornichons, and a glass of red wine for a truly refined experience. The slow-cooking method ensures a tender, melt-in-your-mouth texture that showcases the quality of the ingredients.Ingredients
Directions
-
Finely mince the venison, pork belly, and chicken livers and combine them in a large mixing bowl.
-
Add the zest of the orange and lemon, crushed garlic, fresh thyme, olive oil, red wine vinegar, powdered bay leaves, and plenty of black pepper to the meat mixture.
-
Mix the ingredients thoroughly until well combined, then stir in the red wine.
-
Cover the bowl and refrigerate the mixture to marinate overnight.
-
Season the marinated mixture with salt, starting with 1 teaspoon, and fry a small test nugget to adjust seasoning if necessary.
-
Pack the meat mixture tightly into a 2-1/4 pint terrine mold, pressing well into the corners.
-
Use a spoon to hollow out the center top of the pate slightly.
-
Cover the terrine with greaseproof paper and foil, then place it in a roasting pan filled with hot water halfway up the sides.
-
Bake at 325 F (160 C) for 2-1/4 to 2-1/2 hours.
-
Remove the terrine from the oven and use a bulb baster to remove and reserve most of the cooking juices.
-
Replace the cover, press the pate lightly with a 1.5 to 2 lb weight, and let it cool for 1-1/2 hours.
-
Drain off any remaining juices that have not been re-absorbed by the pate.
-
Mix the reserved venison juices with the juice of the orange to create the glaze.

Note
Additional Ingredients for Glaze: The original recipe mentions 1 tablespoon red wine vinegar, 1 tablespoon olive oil, 1/4 pint red wine, and 1 teaspoon gelatin powder for the glaze. Dissolve gelatin in warm orange juice mixture and brush over the pate before chilling if a firmer set is desired.
Decoration: Garnish with kumquats or orange slices before serving for a festive presentation.
Storage: Refrigerate the finished pate for at least 4 hours or overnight to allow it to set properly. It keeps well in the refrigerator for up to 5 days.
Substitutions: If venison is unavailable, substitute with beef or rabbit. Pork belly can be replaced with pancetta for a slightly different flavor profile.
