Ingredients

Directions

  1. Line an 8.5x4.5-inch loaf pan with plastic wrap, allowing at least 2 inches of overhang on all sides.
  2. Peel carrots and cut diagonally into 1/4-inch-thick slices.
  3. Place carrot slices in a 2-quart saucepan, cover with water, and bring to a boil over medium-high heat.
  4. Cook carrots until just tender, about 10 to 12 minutes, then drain and set aside in a bowl.
  5. Meanwhile, drain beets and cut into 1/4-inch-thick slices; set aside in a separate bowl.
  6. In a small bowl, whisk together cider vinegar, chopped dill, honey, and salt.
  7. Slowly whisk in olive oil until emulsified to create the Dill Dressing.
  8. Toss half of the dressing with the carrots and the remaining dressing with the beets.
  9. In a large bowl, beat goat cheese, cream cheese, and farmer cheese together with an electric mixer until smooth and well blended.
  10. Cover the bottom of the prepared loaf pan with one-third of the dressed carrots, arranged in slightly overlapping rows.
  11. Sprinkle one-third of the chopped green onions over the carrots.
  12. Spread one-fourth of the cheese mixture evenly over the onions and carrots.
  13. Arrange half of the dressed beets in a layer over the cheese.
  14. Repeat the layers: add one-third of the remaining carrots, one-third of the remaining onions, one-fourth of the remaining cheese, and the remaining beets.
  15. Top with the remaining cheese mixture, followed by the remaining onions and carrots.
  16. Fold the overhanging plastic wrap over the terrine to cover completely.
  17. Refrigerate for at least 6 hours or overnight to set.
  18. To serve, uncover the terrine and turn upside down onto a cutting board.
  19. Gently remove the loaf pan and plastic wrap.
  20. Slice the terrine into 6 pieces and transfer to serving plates.
  21. Garnish each piece with a fresh dill sprig if desired.

Note

**Storage:** The terrine must be refrigerated at all times and can be stored for up to 3 days. Keep covered with plastic wrap.

**Cheese Substitutions:** If farmer cheese is unavailable, you can use additional cream cheese or a mild ricotta to maintain the creamy texture, though the flavor will be slightly different.

**Vegetable Prep:** Ensure carrots and beets are cut to similar thicknesses for even cooking and a uniform appearance in the final terrine.

**Unmolding Tip:** If the terrine sticks, run a thin knife around the edges before inverting. You can also dip the loaf pan briefly in hot water for a few seconds to help release the plastic wrap.

**Make Ahead:** This dish improves in flavor as it chills, making it an excellent make-ahead option for parties. Prepare up to 2 days in advance.
