Description

These Golden Honey Rolls are the ultimate comfort food, featuring a tender, pillowy crumb enriched with milk and eggs. The dough is infused with a hint of honey and finished with a warm, buttery sugar glaze that creates a delicate, caramelized crust. Perfect for breakfast, brunch, or as a side dish to soups and stews, these rolls bring a homemade warmth to any table. They are soft enough to melt in your mouth yet sturdy enough to hold up to buttering. A simple recipe that yields impressive results, these rolls are best enjoyed fresh from the oven but are also fantastic for making French toast later in the week.

Ingredients

Directions

  1. In a small saucepan, gently heat the milk, cooking oil, and 2 tablespoons of honey until very warm (about 110F-115F).
  2. In a large mixing bowl, combine 1 1/2 cups of flour, active dry yeast, salt, and eggs.
  3. Pour the warm milk mixture into the dry ingredients and beat with dough hooks for 3 minutes.
  4. Gradually add the remaining 1 3/4 cups of flour, mixing for about 2 more minutes until a soft, sticky dough forms.
  5. Cover the bowl and let the dough rise in a warm place until light and doubled in size, approximately 1 to 1 1/2 hours.
  6. Generously grease two 8-inch round cake pans.
  7. Stir down the risen dough by beating it with dough hooks for 30 seconds to release air.
  8. Drop the dough by tablespoonfuls into the prepared pans, arranging them in a single evenly spaced layer with about ten tablespoonfuls per pan.
  9. In a small saucepan, combine the topping ingredients: 1/3 cup sugar, 2 tablespoons soft butter, 1 tablespoon honey, and the reserved egg white. Warm slightly until combined.
  10. Drizzle half of the topping mixture over the rolls.
  11. Cover the pans and let the rolls rise again in a warm place until doubled in size, about 30 to 45 minutes.
  12. Preheat the oven to 350F (175C).
  13. Drizzle the remaining topping over the risen rolls.
  14. Bake at 350F (177C) for 25-30 minutes, or until the rolls are golden brown.
  15. Immediately remove the rolls from the pans and serve warm.

Note

The dough will be soft and sticky; this is normal for enriched doughs. Do not add excessive flour, as it will make the rolls tough.

Ensure the milk mixture is warm, not hot, to avoid killing the yeast. If the liquid is too hot, the yeast will not activate properly.

For best results, use fresh, active yeast. You can test your yeast by dissolving it in the warm milk with a teaspoon of sugar; it should foam within 5-10 minutes.

The rolls are best served fresh from the oven. If storing, keep them in an airtight container at room temperature for up to 2 days. They can also be frozen for up to 3 months; thaw at room temperature and warm in the oven before serving.

This recipe makes "pull-apart" style rolls in cake pans. For individual rolls, you can shape the dough into balls and place them on a baking sheet, adjusting the baking time slightly.
