Description

This Graham Granola Bread is a robust and comforting loaf that brings a wonderful nutty flavor to your breakfast table. Combining the earthy tones of graham flour with the crunch of finely ground granola and rolled oats, this bread offers a satisfying texture that pairs perfectly with butter, jam, or honey. The addition of buttermilk and butter ensures a tender crumb, while chopped walnuts provide extra richness. It is an ideal choice for weekend brunches or as a hearty accompaniment to soups and stews.

Directions

  1. In a small bowl, combine warm water, sugar, and yeast. Let stand for 5 to 10 minutes until foamy.
  2. In a food processor or blender, finely grind the granola until it resembles coarse meal. Set aside.
  3. In a large mixing bowl, combine the foamy yeast mixture, remaining water, buttermilk, softened butter, honey (or brown sugar), and egg. Whisk until smooth.
  4. Stir in the graham flour, ground granola, rolled oats, chopped walnuts, and salt. Mix until a shaggy dough forms.
  5. Gradually add the all-purpose flour, one cup at a time, mixing until the dough is too stiff to stir. Turn out onto a lightly floured surface.
  6. Knead the dough for 8 to 10 minutes, adding more flour if necessary, until smooth and elastic. The dough should be slightly tacky but not sticky.
  7. Place the dough in a lightly greased bowl, turning to coat. Cover with a damp towel and let rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
  8. Punch down the dough and turn out onto a lightly floured surface. Shape into a loaf and place in a greased 9x5-inch loaf pan.
  9. Cover and let rise again for 45 minutes to 1 hour, until the dough rises about 1 inch above the rim of the pan.
  10. Preheat oven to 375°F (190°C).
  11. Bake the bread for 35 to 45 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.
  12. Remove from the pan immediately and cool on a wire rack for at least 30 minutes before slicing.
